Quick Q-

215/60/14s' fit the front of a stock 89 GT? Clearance issues? Rubs? They will be on 7 inch wide wheels.

I just want as much meat on the tire as possible for HOOK-dont think 205/50/14's will cut it, but would make for a fun final drive ratio. :)

Depending on offset, ride height and alignment they will absolutely fit.

You shouldn't have any problems. I ran 225/50 15's in the front of my car on a 7" rim for a long time and it was fine. There were rubbing issues in the rear, but never the front.
