Starter plate is the little thin plate that is sandwiched by the motor and transmission and alignes the starter nose, and allow for the starter to engage the ring gear on the flywheel.

Would it work if I got a mirage starter plate and cut the piece where the starter mounts to off and use it instead of the whole plate?

You need the whole plate for the exact transmission you're using. A fwd plate will not work with an awd plate, 6 bolt plates won't work with 7 bolt plates, etc. They're cheap and easily found, why bother trying to hack one to make it work?
